  • 2 tablespoons fresh lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic (minced)
  • Salt to taste

Instructions

  1. Wash and cut the potatoes into even-sized pieces.
  2. Boil the potatoes in salted water until tender (about 15-20 minutes). Drain and cool.
