  • 34 lbs turkey breast (bone-in or boneless)
  • 2 cups apple cider
  • 4 tbsp butter
  • 1/4 cup brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 2 cloves garlic (minced)
  • 1/2 tsp cinnamon
  • Optional: fresh rosemary or thyme sprigs
  • Optional: sliced apples

Instructions

  1. Preheat oven to 375°F (190°C). Pat the turkey breast dry with paper towels and season generously with salt and pepper.
  2. In a skillet over medium-high heat, melt 2 tablespoons of butter. Sear the turkey breast until golden brown on all sides (about 3-4 minutes per side).
  3. Place the seared turkey in a roasting pan and pour 1 cup of apple cider into the pan.
  4. For the glaze, combine the remaining apple cider, brown sugar, apple cider vinegar, Dijon mustard, minced garlic, cinnamon, and optional cloves in a saucepan over medium heat. Simmer until thickened (about 10-15 minutes).
  5. Brush the turkey generously with the glaze and roast while basting every 15 minutes until an internal temperature of 165°F (74°C) is reached (approximately 1.5 to 2 hours).
  6. Allow resting for 10-15 minutes before carving; garnish with fresh herbs and sliced apples.
