  • ⅓ cup packed brown sugar
  • ¼ cup old-fashioned oats
  • 1 teaspoon ground cinnamon (for streusel topping)
  • ¼ teaspoon salt (for streusel topping)
  • ¼ cup cold unsalted butter (cubed, for streusel topping)
  • 8 oz cream cheese (softened, for frosting)
  • ¼ cup unsalted butter (softened, for frosting)
  • 3 cups powdered sugar (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 1 teaspoon ground cinnamon (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. For the streusel topping, mix flour, brown sugar, oats, cinnamon, and salt in a bowl. Cut in cold butter until crumbly; refrigerate.
  3. In another bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  4. Cream softened butter and sugar until fluffy. Add eggs one at a time followed by vanilla.
  5. Gradually mix dry ingredients into the wet mixture alternating with milk. Fold in diced apples gently.
  6. Fill muffin cups about two-thirds full and top generously with streusel.
  7. Bake for 22-25 minutes until golden; cool completely before frosting.
  8. While waiting for them to cool, beat together cream cheese and butter until smooth. Gradually add powdered sugar followed by vanilla extract, cinnamon, and salt until fluffy.
  9. Once cooled completely, pipe or spread on your luscious cinnamon cream cheese frosting.
