  • 120 g all-purpose flour (for crumb topping)
  • 200 g dark brown sugar
  • 340 g all-purpose flour (for the cake)
  • 125 g butter (room temperature)
  • 225 g granulated sugar
  • 3 eggs (room temperature)
  • 225 g sour cream (room temperature)
  • 40 g vegetable oil (e.g., canola oil)
  • 1 1/2 tsp vanilla extract
  • 125 g powdered sugar (for glaze)
  • 1 tbsp maple syrup (for glaze)
  • 1 tsp sour cream (for glaze)
  • 1/2 tsp vanilla extract (for glaze)
  • 12 tsp water (for glaze)
  • 1 1/2 tsp ground cinnamon (for apples)
  • 1 tsp ground cinnamon (for crumb topping)
  • ½ tsp ground cinnamon (for cake)
  • 2 1/4 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Dice the gala apples and toss with granulated sugar and cinnamon; set aside.
  3. For the crumb topping, mix flour, dark brown sugar, and cinnamon in a bowl, then add room temperature butter until crumbly.
  4. In another bowl, whisk together flour, baking powder, salt, and cinnamon. Cream butter and granulated sugar until fluffy; add eggs one at a time. Stir in sour cream, vegetable oil, and vanilla. Combine wet and dry ingredients until just mixed.
  5. Pour half of the batter into the greased dish; layer with apples and remaining batter topped with crumb mixture.
  6. Bake for about 70 minutes or until a toothpick comes out clean.
  7. For the glaze, whisk powdered sugar with maple syrup, sour cream, vanilla extract, and water until smooth. Drizzle over warm cake.
