  • 1½ teaspoons baking powder

  • ¼ cup sour cream (or Greek yogurt)
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • ½ cup milk
  • 1½ cups diced apples (Granny Smith or Honeycrisp)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. In a bowl, mix flour, brown sugar, granulated sugar, and cinnamon for the crumble topping; add melted butter until clumps form.
  3. In another bowl, whisk together the remaining flour, baking powder, salt, and cinnamon.
  4. In a large bowl, cream together brown sugar, granulated sugar, and room temperature butter until fluffy; add eggs one at a time along with sour cream and vanilla.
  5. Gradually mix in dry ingredients followed by milk; gently fold in diced apples.
  6. Fill muffin cups about three-quarters full and top generously with crumble mixture.
  7. Bake for about 20 minutes or until a toothpick inserted comes out clean. Let cool slightly before transferring to a wire rack.
