  • ¼ cup granulated sugar
  • ½ cup unsalted butter (room temperature)
  • ¼ cup sour cream (or Greek yogurt)
  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • ½ cup milk (room temperature)
  • 1 ½ cups diced apples (Granny Smith or Honeycrisp)

Instructions

  1. Preheat your oven to 400°F and prepare a muffin tin with paper liners.
  2. In a small bowl, mix together flour, brown sugar, granulated sugar, and cinnamon for the crumble topping. Stir in melted butter until clumps form.
  3. In another bowl, whisk together the flour, baking powder, salt, and cinnamon for the muffin batter.
  4. In a large bowl, beat together brown sugar, granulated sugar, and room-temperature butter until fluffy. Add eggs, sour cream, and vanilla extract; mix until combined.
  5. Gradually combine dry ingredients into the wet mixture while alternating with milk. Gently fold in diced apples.
  6. Fill muffin cups about three-quarters full with batter and top generously with crumble mixture.
  7. Bake for approximately 20 minutes until a toothpick comes out clean. Cool before serving.
