  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups unsalted butter, cold and cubed
  • 1 large egg, beaten
  • 2 cups dried apricots, chopped
  • 1 1/2 cups water
  • 1/2 cup granulated sugar (for filling)
  • 2 tablespoons fresh lemon juice

Instructions

  1. Prepare the apricot filling by simmering chopped apricots, water, and sugar in a saucepan until tender. Stir in lemon juice and cool.
  2. Make the shortbread dough by mixing flour, sugar, baking powder, salt, and cold butter until crumbly. Add the beaten egg and vanilla extract.
  3. Press half of the dough into a greased pan. Spread cooled apricot filling over it and crumble remaining dough on top.
  4. Bake at 375°F (190°C) for 30-35 minutes until golden brown.
  5. Allow to cool completely before cutting into bars.
