  • 34 lbs organic chicken (skin removed)
  • 23 Tbsps Jamaican Green Seasoning
  • 2 Tbsps Jamaican curry powder
  • 1 can (14 oz) full-fat coconut milk
  • 2 medium russet potatoes (peeled and cubed)
  • 2 medium carrots (peeled and chopped)
  • 1 medium bell pepper (chopped)
  • 3 garlic cloves (minced)
  • 13 scotch bonnet peppers (to taste)
  • 1 cup organic chicken stock
  • Fresh thyme sprigs

Instructions

  1. Marinate the chicken with Jamaican Green Seasoning and curry powder for at least 30 minutes.
  2. Heat olive oil in a large pot over medium heat; sauté minced garlic and ginger until fragrant.
  3. Add marinated chicken pieces; brown on all sides.
  4. Stir in coconut milk, chicken stock, potatoes, carrots, bell pepper, and thyme.
  5. Add sliced scotch bonnet peppers based on your desired spice level.
  6. Cover and simmer on low heat for about 40 minutes until flavors meld and chicken is tender.
  7. Taste and adjust seasoning before serving.
