- 3–4 lbs organic chicken (skin removed)
- 2–3 Tbsps Jamaican Green Seasoning
- 2 Tbsps Jamaican curry powder
- 1 can (14 oz) full-fat coconut milk
- 2 medium russet potatoes (peeled and cubed)
- 2 medium carrots (peeled and chopped)
- 1 medium bell pepper (chopped)
- 3 garlic cloves (minced)
- 1–3 scotch bonnet peppers (to taste)
- 1 cup organic chicken stock
- Fresh thyme sprigs
- Marinate the chicken with Jamaican Green Seasoning and curry powder for at least 30 minutes.
- Heat olive oil in a large pot over medium heat; sauté minced garlic and ginger until fragrant.
- Add marinated chicken pieces; brown on all sides.
- Stir in coconut milk, chicken stock, potatoes, carrots, bell pepper, and thyme.
- Add sliced scotch bonnet peppers based on your desired spice level.
- Cover and simmer on low heat for about 40 minutes until flavors meld and chicken is tender.
- Taste and adjust seasoning before serving.
