  • 5 cups butternut squash (about 1 large squash)
  • ½ cup olive oil (plus more for drizzling)
  • 1 block (8 oz) feta cheese
  • 1 lb pasta (such as rotini or ditalini)
  • 10 leaves fresh sage (minced)
  • 3 cloves garlic (minced)
  • Hot honey or regular honey
  • Fresh cracked black pepper

Instructions

  1. Preheat your oven to 400°F.
  2. In a large bowl, toss butternut squash with olive oil, salt, and pepper. Spread in a baking dish with feta cheese in the center. Drizzle with more olive oil and add red pepper flakes if desired. Bake for 30 minutes.
  3. Increase oven temperature to 450°F and bake for an additional 5-10 minutes until feta is slightly browned.
  4. Cook pasta in salted water until al dente; reserve about two cups of pasta water before draining.
  5. Combine baked feta mixture with minced garlic, sage, hot honey, cooked pasta, and one cup reserved pasta water. Mix well until creamy; adjust consistency with additional pasta water as needed.
