  • 4 cloves garlic, minced
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cups low-sodium beef broth
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • 3 tbsp butter
  • Fresh parsley (optional)

Instructions

  1. In a large skillet, melt 1 tablespoon of butter over medium heat. Sauté the diced onion for 3-4 minutes until softened.
  2. Add ground beef and cook until browned, breaking it apart as it cooks. Drain any excess fat.

  5. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender.
  6. In a separate saucepan over low heat, melt remaining butter and mix in Parmesan cheese, cheddar cheese, and milk until smooth.
  7. Pour cheese sauce into the skillet with the beef and rice; stir until well combined.
  8. Cook uncovered for a couple more minutes before serving warm with chopped parsley on top.
