  • 4 Yellow Onions (thinly sliced)
  • 2 Pounds Yukon Gold Potatoes (washed)
  • 4 Tablespoons Olive Oil
  • 4 Tablespoons Salted Butter (or non-dairy butter)
  • 3/4 Cup Half & Half or Dairy-Free Milk
  • 1 Teaspoon Kosher Salt
  • 1 Cup Parmesan Cheese (freshly grated) – optional
  • Fresh herbs: Chives, Thyme, Sage

Instructions

  1. Start by peeling and thinly slicing the yellow onions. Heat olive oil in a skillet over medium heat, then add the onions. Cook slowly for about 40-50 minutes until they are golden brown and caramelized.
  2. While the onions are cooking, wash and chop Yukon Gold potatoes into small pieces. Boil in salted water until fork-tender, about 20 minutes.
  3. Drain the potatoes and mash them in a large bowl with butter, half & half (or dairy-free milk), and kosher salt until creamy.
  4. Fold in half of the caramelized onions and optional parmesan cheese until well combined.
  5. Serve topped with remaining caramelized onions and freshly chopped herbs.
