Instructions

  1. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  2. In a large bowl, cream together softened butter and both sugars until fluffy.
  3. Add eggs one at a time and mix in vanilla until combined.
  4. Gradually add dry ingredients to wet mixture; mix until just combined.
  5. Divide dough into two portions, shape into disks, wrap in plastic, and chill for at least one hour.
  6. Prepare the filling by mixing brown sugar, cornstarch, and cinnamon in a small bowl.
  7. Roll out chilled dough to about ¼ inch thick and cut into rectangles.
  8. Place filling on half of the rectangles, top with remaining rectangles, seal edges with a fork.
  9. Bake at 350°F (175°C) for 12–15 minutes until lightly golden.
