  • 1/2 tsp salt
  • 1 cup browned unsalted butter
  • 1 cup light brown sugar
  • 1/3 cup pure maple syrup
  • 1 large egg yolk, room temperature
  • 1/2 cup canned pumpkin, blotted
  • 2 tsp vanilla extract
  • 1/2 tsp maple extract, optional
  • 1/2 cup granulated sugar
  • 1/2 tsp pumpkin or chai spice blend

Instructions

  1. Prepare brown butter by melting it in a saucepan until golden and fragrant, then let it cool.
  2. Blot canned pumpkin on paper towels to remove excess moisture.
  3. In one bowl, mix flour, spice blend, baking soda, and salt. In another bowl, combine cooled brown butter, light brown sugar, and maple syrup.
  4. Stir in egg yolk and prepared pumpkin into the wet mixture until combined.
  5. Gradually fold in dry ingredients until just combined. Chill dough for at least 8 hours.
  6. Preheat oven to 350°F (177°C) and line cookie sheets with parchment paper.
  7. Roll chilled dough into balls, coat in spiced sugar mixture, and place on sheets.
