  • 3 cups bread flour
  • 1/4 tsp active dry yeast
  • 1 1/4 tsp coarse salt
  • 1 2/3 cup warm water
  • Pear
  • Cherry tomatoes
  • Pearl onions
  • Thinly sliced red onion
  • Fresh rosemary sprigs
  • Coarse salt
  • Plenty of olive oil (a few Tbs.)

Instructions

  1. In a large bowl, mix bread flour, yeast, and salt until combined. Slowly add warm water and stir with a wooden spoon until shaggy dough forms. Cover and let rise overnight at room temperature.
  2. The next day, drizzle olive oil into a 7×12 inch casserole dish. Gently spread the risen dough into shape using your hands and dimple it with fingers. Let it rest covered for another two hours.
  3. Preheat oven to 400°F (200°C). Decorate your focaccia by arranging rosemary as branches and adding pear slices and halved cherry tomatoes as ornaments.
  4. Sprinkle with coarse salt and bake for about 25 minutes or until puffed and golden brown.
  5. Allow to cool slightly before slicing and serving warm.
