  • 1/2 cup milk
  • 1/2 cup light brown sugar (packed)
  • 11/2 teaspoons ground cinnamon
  • 1 large apple (peeled, cored, and chopped into small pieces)
  • 2 tablespoons brown sugar
  • 3/4 cups confectioners’ sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8.5 x 4.5 inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat softened butter and granulated sugar until smooth. Add vanilla and eggs one at a time.
  4. Gradually mix in the dry ingredients alternately with milk until just combined.
  5. Toss chopped apples with light brown sugar and cinnamon in a separate bowl.
  6. Layer half of the batter in the pan, followed by half of the apple mixture; swirl gently. Repeat layers and top with extra cinnamon-sugar mix.
  7. Bake for 45 to 55 minutes or until a toothpick comes out clean.
  8. Cool slightly before drizzling with glaze made from confectioners’ sugar, cinnamon, and water.
