  • 1 ½ cups graham cracker crumbs
  • 2 tbsp granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp coconut extract
  • 8 oz Cool Whip, thawed
  • 2 (3.4 oz) boxes instant coconut cream pudding mix
  • 3 cups half-and-half

Instructions

  1. Prepare the crust by mixing graham cracker crumbs, granulated sugar, and melted butter in a bowl. Press firmly into the bottom of a 9×13 inch dish.
  2. For the cream cheese layer, beat softened cream cheese and powdered sugar until smooth. Add coconut extract and fold in half of the Cool Whip. Spread over the crust.
  3. In another bowl, whisk together pudding mix and half-and-half until thickened. Pour this layer over the cream cheese layer.
  4. Spread the remaining Cool Whip on top and sprinkle toasted shredded coconut.
  5. Cover with plastic wrap and refrigerate for at least six hours or overnight before serving.
