  • 15.5 oz. black-eyed peas, drained and rinsed
  • 15 oz. sweet corn, drained
  • 1 cup fresh cilantro, chopped
  • ½ cup red bell pepper, diced
  • ½ cup orange bell pepper, diced
  • ½ cup red onion, diced
  • 1 tsp. chili powder
  • ½ tsp. kosher salt
  • ¼ cup granulated sugar
  • ½ cup olive oil
  • ⅓ cup white apple vinegar
  • 1 tbsp. fresh lime juice
  • ¼ tsp. garlic powder

Instructions

  1. Drain and rinse the black beans, black-eyed peas, and sweet corn; pat dry.
  2. In a large bowl, combine beans, corn, cilantro, red bell pepper, orange bell pepper, and red onion.
  3. In another bowl, whisk together chili powder, salt, sugar, olive oil, vinegar, lime juice, and garlic powder until smooth.
  4. Pour the dressing over the bean mixture and stir gently until coated.
  5. Refrigerate for at least 30 minutes to allow flavors to meld before serving.
