  • 6 cups vegetable stock (or chicken stock)
  • 1 cup uncooked wild rice
  • 8 ounces baby bella mushrooms, sliced
  • 4 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 ribs celery, diced
  • 1 large sweet potato, peeled and diced
  • 1 small white onion, peeled and diced
  • 1 bay leaf
  • 1 ½ tablespoons Old Bay seasoning
  • 1 (14-ounce) can unsweetened coconut milk
  • 2 large handfuls of kale, roughly chopped

Instructions

  1. Heat vegetable stock in a large pot over medium heat. Add uncooked wild rice and simmer.
  2. In another pan, sauté onions, garlic, carrots, celery, and sweet potato until soft.
  3. Combine sautéed veggies into the pot with wild rice; add sliced mushrooms, bay leaf, and Old Bay seasoning. Simmer to meld flavors.
  4. After about 30 minutes of cooking, stir in coconut milk and season with salt and pepper.
  5. Fold in chopped kale until wilted; simmer for an additional few minutes before serving.
