  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch salt (optional and to taste)
  • For the cream cheese filling: 1 large egg, 4 ounces softened cream cheese, 1/4 cup granulated sugar, 3 tablespoons all-purpose flour

Instructions

  1. Preheat your oven to 350°F.
  2. In a bowl, combine pumpkin puree, egg, sugars, coconut oil, sour cream, vanilla extract, and spices until smooth.
  3. Gently fold in flour, baking powder, baking soda, and salt until just combined.
  4. In another bowl, whisk together the cream cheese filling ingredients until smooth.
  5. Pour two-thirds of the pumpkin batter into a greased loaf pan. Add the cream cheese filling on top and cover with remaining batter.
  6. Bake for about 48 minutes or until golden brown and a toothpick inserted comes out clean.
  7. Let cool before slicing.
