  • 11/2 lbs White Creamer potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Chopped fresh parsley

Instructions

  1. Poke each potato with a fork and microwave for 8 minutes (4 minutes on each side) to soften.
  2. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  3. Coat softened potatoes in olive oil, salt, and pepper in a mixing bowl.
  4. Smash each potato to about 3/8" thick and place on the baking sheet.
  5. Bake for 12 minutes total, flipping halfway through until crispy and golden.
  6. Garnish with chopped parsley before serving.
