  • 3 tablespoons butter
  • 1/2 yellow onion (diced)
  • 3 garlic cloves (minced)
  • 1 cup pumpkin puree
  • 1 1/2 cups heavy whipping cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground sage
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon brown sugar
  • 1/2 cup freshly grated parmesan cheese

Instructions

  1. Cook the pasta according to package instructions until al dente, then drain.
  2. In a skillet over medium heat, melt the butter and sauté the diced onion and optional red pepper flakes for about 5-7 minutes until soft. Add minced garlic and cook for another minute.
  3. Stir in the pumpkin puree and let it sauté for one minute. Pour in heavy whipping cream, whisk until combined, then season with salt, black pepper, sage, nutmeg, and brown sugar. Simmer for 2-3 minutes before mixing in parmesan cheese.
  4. Combine the cooked pasta with the sauce and toss well to coat.
  5. Serve hot garnished with additional parmesan cheese and cracked black pepper.
