2 boneless, skinless chicken breasts
1 tablespoon olive oil
1 cup chicken broth
1 cup heavy cream
1 onion, diced
3 cloves garlic, minced
1 cup shredded cheese (cheddar or mozzarella)
2 cups cooked jasmine or basmati rice
Instructions
Season chicken with salt and pepper. In a skillet over medium heat, heat olive oil and sear chicken until golden brown (about 5–7 minutes per side). Remove from pan.
In the same skillet, sauté diced onion for 3–4 minutes; add garlic and cook for another minute.
Deglaze the pan with chicken broth, scraping up browned bits. Stir in heavy cream, Dijon mustard, paprika, garlic powder, and onion powder. Simmer for 5 minutes until thickened.
Add cheese until melted and smooth. Return chicken to the skillet to coat with sauce; simmer for another 3–4 minutes.
Serve over cooked rice and garnish with chopped parsley.
