  • 1 cup orzo pasta
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon butter

Instructions

  1. Season chicken with salt, pepper, garlic powder, and Italian seasoning. In a skillet, heat olive oil over medium-high heat and sear the chicken for 5-6 minutes per side until golden brown. Remove from skillet.
  2. In the same skillet, reduce heat to medium. Add butter and sauté minced garlic until fragrant (about 30 seconds). Stir in orzo and toast for 1-2 minutes.
  3. Add sun-dried tomatoes and chicken broth; bring to a gentle simmer. Cover and cook for about 10 minutes until orzo is tender.
  4. Stir in heavy cream and Parmesan cheese until melted. Add chopped spinach until wilted.
