  • 3/4 cup packed light brown sugar

  • 1 1/2 cups packed shredded zucchini
  • 1 cup semisweet chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, mix eggs, melted butter, oil, brown sugar, and vanilla until smooth.
  4. Fold the dry ingredients into the wet mixture until just combined. Gently stir in shredded zucchini and three-fourths of the chocolate chips.
  5. Pour batter into the prepared loaf pan and sprinkle remaining chocolate chips on top.
  6. Bake for 50-60 minutes or until a toothpick comes out mostly clean. Allow cooling for about 15 minutes before transferring to a wire rack.
