  • ¾ cup Unsweetened cocoa powder (high-quality)

  • 1 ½ tsp Baking soda

  • 2 large Eggs (room temperature)
  • ½ cup Vegetable oil (neutral-flavored)
  • 1 cup Buttermilk (room temperature)
  • 1 cup Hot coffee (enhances chocolate flavor)
  • 8 oz Semisweet chocolate (melted and cooled)
  • 2 cups Heavy whipping cream (cold)
  • 1 tbsp Powdered sugar
  • 1 tsp Vanilla extract
  • 1 tsp Unflavored vegan gelatin (optional stabilizer)
  • 6 oz Bittersweet chocolate (finely chopped)
  • ¾ cup Heavy cream (heated)
  • 1 tbsp Light corn syrup (for shine)
  • 1 tbsp Butter (room temperature)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, combine eggs, vegetable oil, buttermilk, and hot coffee.
  4. Gently fold the wet mixture into the dry ingredients until smooth.
  5. Divide batter into prepared pans and bake for 25–30 minutes; cool completely.
  6. For the mousse, melt semisweet chocolate and whip cold heavy cream with powdered sugar until stiff peaks form; fold in melted chocolate.
  7. Layer cake and mousse in a springform pan; chill for at least 3 hours.
  8. To make ganache, heat cream and pour over chopped bittersweet chocolate; stir until smooth and add corn syrup and butter.
  9. Pour ganache over chilled cake; let set before serving.
