- 8 oz. dry rotini pasta
- 9 oz. hard turkey slices, chopped
- 6.5 oz. turkey pepperoni, chopped
- 1 cup canned artichoke hearts, drained & quartered
- 2 cups cherry tomatoes, halved
- 1 cup olives, pitted & halved
- ½ cup pepperoncini, sliced
- 8 oz. mozzarella pearls
- ¼ cup red onion, thinly sliced
- ⅓ cup fresh basil, sliced
- ½ cup olive oil
- ¼ cup red apple vinegar
- 2 garlic cloves, minced
- 1 Tbsp Italian seasoning
- ¼ tsp red pepper flakes
- Salt & black pepper, to taste
- Cook rotini pasta according to package directions; drain and cool.
- In a bowl, whisk together olive oil, red apple vinegar, minced garlic, Italian seasoning, red pepper flakes, salt, and pepper.
- Chop turkey slices and pepperoni; halve cherry tomatoes; slice olives and red onion; chop fresh basil.
- Combine cooled pasta with all ingredients in a large bowl; drizzle with vinaigrette and toss until well-coated.
- Chill for at least 30 minutes before serving for enhanced flavor.
