  • lbs sirloin steak, cut into bite-sized cubes
  • lbs baby potatoes, halved or quartered
  • 4 tablespoons olive oil (divided)
  • 4 tablespoons butter
  • 56 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian herbs
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add potatoes seasoned with salt, pepper, and paprika. Cook until golden brown and fork-tender (about 15 minutes). Remove from skillet.
  2. Season steak cubes with salt, pepper, and Italian herbs. In the same skillet, add another tablespoon of olive oil and 2 tablespoons of butter. Sear steak in batches for 2–3 minutes on each side until browned.
  3. Reduce heat to medium-low and add remaining butter along with minced garlic. Sauté for about a minute until fragrant.
  4. Return the cooked potatoes to the skillet and toss everything together gently to coat in the garlic butter sauce. Cook for an additional minute or two before garnishing with fresh parsley.
