  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese (or nutritional yeast)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh oregano, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • Juice of 1 lemon
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine ground chicken, breadcrumbs, grated cheese (or nutritional yeast), garlic, herbs, salt, and pepper. Mix gently until just combined.
  3. Form small meatballs (about 1 inch) and place them on a lined baking sheet. Bake for approximately 20 minutes until golden brown.
  4. While baking, bring vegetable broth to a boil and cook orzo according to package instructions until al dente.
  5. Once cooked, drain excess liquid from the orzo and stir in olive oil, lemon juice, zest, and seasoning. Gently fold in the meatballs.
