  • 4 tablespoons unsalted butter (melted, divided)
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Place one potato between two chopsticks or skewers to prevent cutting through completely. Slice vertical slits about ⅛ inch apart until your knife meets the chopsticks.
  3. Arrange the sliced potatoes on an unlined baking sheet and brush half of the melted butter over them, ensuring some seeps into the slits.
  4. Sprinkle kosher salt and pepper generously over the potatoes.
  5. Bake for 30 minutes, then gently pull apart the layers and brush on the remaining melted butter. Return to bake for another 30-35 minutes until golden brown and tender.
