  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips
  • 1 cup chocolate chips (for topping)
  • 1 tsp coconut oil (for melting chocolate)
  • Flaky sea salt (optional)

Instructions

  1. In a bowl, mix almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt until smooth. Stir in chocolate chips.
  2. Line a cutting board with parchment paper and press the cookie dough mixture into an even layer about 1/2 inch thick.
  3. Melt additional chocolate chips with coconut oil in intervals in the microwave until fully melted.
  4. Pour melted chocolate over the cookie dough layer and spread evenly. Sprinkle flaky sea salt on top if desired.
  5. Freeze for about 10 minutes to set before cutting into pieces.
