  • 4 bell peppers (any color)
  • 1 Tbsp olive oil
  • 4 cups fresh spinach
  • 1 tub (15 oz) ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan
  • ½ cup sliced green onions
  • ½ cup chopped fresh basil
  • 2 large eggs
  • ½ cup breadcrumbs

Instructions

  1. Preheat your oven to 400°F (204°C). Halve the bell peppers, remove seeds, and place cut side up on a parchment-lined baking sheet. Brush with olive oil and bake for about 20 minutes until slightly softened.
  2. While the peppers bake, microwave spinach until wilted (15-30 seconds). In a bowl, mix spinach with ricotta, mozzarella, parmesan, green onions, basil, herbs, eggs, salt, and pepper until well combined.
  3. Remove peppers from the oven and drain excess water. Fill each pepper generously with the ricotta mixture.
  4. Combine breadcrumbs with oil in a small bowl and sprinkle over the stuffed peppers. Return them to the oven and bake for another 30 minutes until golden brown.
