  • 1 lb ground turkey or chicken sausage, browned and crumbled
  • 2 cups milk (try Fairlife for extra protein)
  • 2 eggs
  • ¼ cup maple syrup
  • 1 cup shredded cheese (cheddar or Colby jack)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare a mini muffin tin by spraying it with non-stick cooking spray.
  3. In a large bowl, whisk together pancake mix, milk, eggs, and maple syrup until smooth.
  4. Gently fold in the cooked sausage and shredded cheese.
