  • 1 lb ground beef
  • 1/2 cup plain bread crumbs
  • 1/2 cup grated parmesan cheese
  • 1 egg
  • 1/2 yellow onion (diced)
  • 4 garlic cloves (minced)
  • 2 tbsp olive oil (for cooking)
  • 2 medium carrots (diced)
  • 23 tomatoes on a vine (diced)
  • 56 cups beef stock
  • 4 oz tomato paste
  • 1/21 tsp salt (more or less to taste)
  • 1 tsp red pepper flakes (more or less to taste)
  • 1 tbsp dried parsley
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1416 oz gnocchi (homemade or ready-to-use)

Instructions

  1. In a large bowl, mix ground beef, bread crumbs, grated parmesan, egg, minced onion, garlic, parsley, basil, red pepper flakes, salt, and black pepper until well combined. Form small meatballs (about one inch).
  2. Heat olive oil in a large pot over medium heat; brown meatballs on all sides and set aside.
  3. In the same pot, sauté diced onions and carrots until tender. Add diced tomatoes and minced garlic; cook until fragrant.
  4. Pour in water and beef stock along with tomato paste and seasonings. Bring to a simmer.
  5. Add browned meatballs back into the pot; let simmer for about 20 minutes.
  6. Stir in gnocchi; cook until they float to the top.
