  • 1 can (14 oz) cannellini beans, drained and rinsed
  • ½ cup cherry tomatoes, quartered
  • ¼ cup olives, torn
  • ¼ cup red onion, sliced
  • 2 tablespoons parmesan shavings
  • For Salsa Verde: parsley, basil, capers, garlic, olive oil, and red apple vinegar

Instructions

  1. In a bowl, mix parsley, basil, capers, garlic, salt (or anchovy paste), red pepper flakes, black pepper, olive oil, and vinegar to create the salsa verde.
  2. In another bowl, combine cannellini beans, cherry tomatoes, torn olives, red onion and sprinkle with salt. Toss gently.
  3. Drizzle salsa verde over the salad; toss carefully to coat all ingredients.
