  • 1/2 cup panko breadcrumbs
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 egg
  • 2 tbsp olive oil (for frying)
  • 1 tbsp fresh lemon juice
  • 1 tbsp olive oil for tzatziki
  • 1 tbsp fresh dill, chopped

Instructions

  1. In a large bowl, mix together ground chicken, breadcrumbs, red onion, garlic, parsley, mint, oregano, cumin, salt, and pepper until well combined.
  2. Add in the egg and gently mix until just incorporated. Shape into 20 meatballs.
  3. Heat olive oil in a skillet over medium heat and cook meatballs for about 4-5 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F).
  4. For the tzatziki sauce, combine Greek yogurt, grated cucumber (squeezed dry), minced garlic, lemon juice, olive oil, dill, salt, and pepper in a bowl; stir to combine.
  5. Chill tzatziki for at least 15 minutes before serving alongside meatballs.
