Ingredients

  • rolled oats
  • all-purpose flour
  • brown sugar
  • unsalted butter (melted)
  • fresh lemons (juiced and zested)
  • granulated sugar
  • cornstarch
  • non-dairy milk (unsweetened)

Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, combine rolled oats, all-purpose flour, brown sugar, melted butter, baking powder, and salt until crumbly.
  2. Grease a 9×9-inch baking dish or line it with parchment paper. Press two-thirds of the oat mixture into the bottom of the dish to form the crust.
  3. In another bowl, whisk together fresh lemon juice, lemon zest, granulated sugar, cornstarch, and non-dairy milk until smooth. Pour over the crust.
  4. Sprinkle the remaining oat mixture on top of the filling for crumble texture.
  5. Bake for about 38 minutes until golden brown. Allow to cool completely before slicing.
