  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • Juice and zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves

Instructions

  1. Pound the chicken breasts to an even thickness and season with salt and pepper.
  2. Heat olive oil in a large pan over medium-high heat; cook the chicken for about 3-4 minutes on each side until golden brown and cooked through. Remove from the pan.
  3. In the same pan, sauté minced garlic for one minute. Add chicken broth, lemon juice, and zest; bring to a boil. Reduce heat, stir in heavy cream, and let simmer until slightly thickened.
  4. Add spinach to the sauce, cooking until wilted. Return chicken to the pan, spooning sauce over it, then sprinkle additional Parmesan cheese on top before covering for two more minutes.
