  • 200 g granulated sugar
  • 2 tbsp lemon zest (from 23 large lemons)
  • 270 g almond flour
  • 3 large egg whites (room temperature)
  • 1/4 tsp fine sea salt
  • 1 1/2 tsp pure almond extract
  • 3 tbsp lemon juice (as an alternative to limoncello)
  • 50 g granulated sugar (for rolling)
  • 30 g powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine granulated sugar and lemon zest by massaging until fragrant.
  3. In a large bowl, sift almond flour and whisk in the lemon sugar mixture.
  4. In a separate bowl, whip egg whites and salt until stiff peaks form.
  5. Gently fold in almond extract, lemon juice, and one-third of the almond flour mixture; then gradually mix in the rest.
  6. Roll dough into balls, first coating in granulated sugar then powdered sugar.
  7. Place on the baking sheet, press lightly to create cracks, and bake for 22–25 minutes until golden beneath.
