  • 16 ounces cremini mushrooms, sliced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • ½ cup raw walnut halves
  • 1 ¼ cups cooked pearled barley
  • 1 cup cooked pinto or black beans
  • 2 tablespoons vegan Worcestershire sauce
  • ½ cup panko breadcrumbs
  • 1 teaspoon fine sea salt
  • black pepper

Instructions

  1. Sauté onions and mushrooms in a large pan over medium-low heat until moisture evaporates (about 15 minutes). Add garlic, thyme, and smoked paprika; cook for an additional 3 minutes.
  2. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. In a food processor, pulse walnuts until coarsely crumbled. Add sautéed vegetables, barley, beans, nutritional yeast, Worcestershire sauce, breadcrumbs, salt, and pepper. Pulse until combined but chunky.
  4. Form mixture into patties using about ½ cup per burger (makes approximately eight patties).
  5. Place on the baking sheet; bake for 30-35 minutes total, flipping halfway through.
