  • 1 lb smoked sausage (kielbasa or turkey sausage), sliced
  • 1 ½ cups uncooked long grain rice
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 ½ cups chicken broth
  • ½ cup barbecue sauce
  • Salt and pepper to taste
  • Chopped green onions or parsley (optional garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the sliced sausage and sear until browned on both sides. Remove from the pan.
  2. In the same skillet, add onion and sauté until translucent (about 5 minutes). Stir in garlic and cook for an additional 30 seconds.
  3. Add uncooked rice to the skillet, toasting it for about 2–3 minutes until golden.
  4. Pour in chicken broth and BBQ sauce; stir well, scraping any bits from the bottom of the pan.
  5. Return the sausage to the skillet, bring to a simmer, cover, and reduce heat to low. Cook for about 18–20 minutes.
  6. Once done, let it sit covered for an additional 5 minutes before fluffing with a fork.
