- 4 skinless salmon fillets
- 1 cup dry orzo pasta
- 5 ounces baby spinach
- 3 cups low sodium chicken broth
- ½ cup grated Parmesan cheese
- Juice from ½ lemon
- 1 tbsp olive oil
- 1 tsp unsalted butter
- 1 yellow onion (finely chopped)
- 3 garlic cloves (minced)
- 1 tsp dried thyme
- 1 tsp salt (divided)
- 1 tsp coarsely ground black pepper (divided)
- 1 tsp sweet paprika
- 1 tsp garlic powder
- Freshly ground black pepper (for serving)
- Chili flakes (for serving)
- Season salmon fillets with garlic powder, paprika, salt, and pepper.
- Heat olive oil and butter in a skillet over medium heat. Sear salmon for 3-4 minutes on each side until golden brown. Remove from the skillet.
- In the same skillet, sauté chopped onion and minced garlic until fragrant. Stir in thyme and remaining salt and pepper.
- Add orzo to toast for about a minute, then pour in chicken broth and bring to a boil. Reduce heat and simmer until orzo is al dente (about 8 minutes).
- Stir in spinach until wilted, then mix in lemon juice and Parmesan cheese.
- Return salmon to the skillet, simmer for another 2-3 minutes until warmed through.
- Serve hot with freshly ground pepper and chili flakes if desired.
