  • 1 stick butter (1/2 cup)
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons herb seasoning (divided)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 lbs red potatoes (washed)
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 400°F and place the butter in a 9×13 baking pan to melt as the oven heats.
  2. Cut each potato in half and score lightly with a knife.
  3. In a bowl, mix Parmesan cheese with 2 tablespoons of herb seasoning, salt, and black pepper.
  4. Once the butter is melted, sprinkle some seasoning in the pan and place potatoes cut-side down on top.
  5. Spray tops of potatoes with cooking spray and add remaining herb seasoning.
  6. Bake uncovered for about 40 minutes until tender.
