  • 1/2 cup packed light brown sugar
  • 1 1/4 cups canned pumpkin puree
  • 1 large egg (room temperature)
  • 1 teaspoon pure vanilla extract
  • 8 ounces block-style cream cheese (softened but still cool)
  • 1/4 cup unsalted butter (softened but still cool)
  • 1 teaspoon pure vanilla extract
  • 1 3/4 cups confectioners’ sugar (sifted)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
  3. Cream room temperature butter with granulated and brown sugars until fluffy.
  4. Mix in pumpkin puree, egg, and vanilla until well combined.
  5. Gradually add dry ingredients to wet mixture; mix just until combined.
  6. Scoop tablespoons of dough onto the prepared baking sheet, spacing them apart.
  7. Bake for 13 to 15 minutes until edges are set; cool on wire racks.
  8. For frosting, beat softened cream cheese and butter until smooth; add vanilla and sifted confectioners’ sugar and mix well.
  9. Frost cooled cookies generously and sprinkle with cinnamon if desired.
