  • 1 cup (8 ounces) mascarpone cheese, room temperature
  • ¼ cup granulated sugar
  • 4 large eggs, divided
  • 1 teaspoon vanilla extract
  • ½ cup packed light brown sugar
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon nutmeg
  • Pinch cloves
  • Pinch coarse kosher salt
  • 1 (15 ounce) can pumpkin puree

  1. Preheat your oven according to the pie crust instructions; bake and cool the crust.
  2. In a bowl, mix mascarpone cheese and granulated sugar until smooth. Add three eggs one at a time and mix well. Stir in vanilla extract.
