  • 1 cup all-purpose flour
  • 1/4 cup coconut oil
  • 1/4 tsp salt
  • 4 tbsp ice cold water
  • 1/2 cup organic shortening or vegan butter
  • 3/4 cups + 2 tbsp confectioners' sugar
  • Seeds from 1/4 vanilla bean
  • Pinch of salt
  • Dash of non-dairy milk
  • 1 tbsp pumpkin puree
  • 1 cup confectioners' sugar
  • 2 tsp pumpkin pie spice
  • 1/2 tsp vanilla

Instructions

  1. Prepare equipment by cleaning mixing bowl and whisk attachment with vinegar.
  2. Accurately measure all ingredients using a kitchen scale.
  3. Mix almond meal and powdered sugar; sift together to eliminate lumps.
  4. Create meringue by whisking egg whites until soft peaks form; gradually add heated sugar syrup.
  5. Fold the meringue into the dry mixture until smooth yet thick.
  6. Pipe 1½-inch rounds onto lined baking sheets and allow to rest for 20-30 minutes before baking at 300°F.
  7. Cool completely before filling with pumpkin frosting and assembling with pie crust cutouts.
