  • ½ Cup pumpkin puree

  • 1 Teaspoon baking soda
  • 1 Teaspoon pumpkin pie spice
  • ½ Teaspoon salt
  • 1 Cup chocolate chips
  • 1 Cup mini vegan marshmallows
  • 8 graham crackers (broken into small pieces)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together room temperature butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in pumpkin puree, egg, and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually add dry ingredients to wet ingredients until just combined.
  6. Fold in chocolate chips, mini vegan marshmallows, and broken graham cracker pieces.
  7. Drop rounded tablespoons of dough onto a prepared baking sheet about 2 inches apart.
  8. Press extra marshmallows and chocolate chips into the tops of each cookie dough ball.
  9. Bake for 12-14 minutes until edges are golden but centers remain soft.
  10. Let cool on the baking sheet before transferring to a wire rack.
