  • 170 grams pumpkin puree
  • 1 tablespoon maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 200 grams all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100 grams powdered sugar
  • 2 tablespoons milk (as needed)
  • 2 tablespoons maple syrup

Instructions

  1. Preheat oven to 175°C (350°F). Grease and flour a small springform pan.
  2. In a bowl, beat eggs and sugar until light and fluffy.
  3. Add coconut oil, pumpkin puree, vanilla extract, and optional maple syrup; mix well.
  4. In another bowl, whisk together flour, baking powder, and pumpkin spice. Gradually fold into the wet mixture until just combined.
  5. Pour batter into the prepared pan and bake for about 25 minutes; cover with foil and bake an additional 20 minutes. Use a toothpick to check doneness.
