  • 1 pound sweet cherry tomatoes
  • 3 tablespoons olive oil (divided)
  • 4 minced garlic cloves (divided)
  • Salt and black pepper
  • 8 ounces ricotta
  • 1 bunch fresh basil (divided)
  • 1 crusty bread loaf
  • Balsamic glaze

Instructions

  1. Preheat oven to 400°F. In a baking dish, toss cherry tomatoes with 1 tablespoon olive oil, 2 minced garlic cloves, salt, and pepper. Bake for 20 minutes until tomatoes burst.
  2. Blend ricotta with 1 minced garlic clove, 1 tablespoon olive oil, half of the basil leaves, salt, and pepper until smooth.
  3. Slice the bread into twelve pieces. Brush with garlic-infused oil (made from the remaining olive oil and last garlic clove) and toast for 10-12 minutes until golden.
  4. Assemble by spreading ricotta on each slice of toasted bread, topping with roasted tomatoes and torn basil leaves. Drizzle with balsamic glaze before serving.
