  • 1 bunch asparagus, trimmed
  • 1 bunch radishes, trimmed and halved
  • 4 tbsp olive oil (2 for veggies, 2 for vinaigrette)
  • Salt and pepper to taste
  • 2 tbsp whole grain mustard
  • 1 tbsp Dijon mustard
  • 2 tbsp red apple vinegar
  • 1 garlic clove, minced
  • 1 tsp honey (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, toss asparagus and halved radishes with 2 tablespoons of olive oil, salt, and pepper until well coated.
  3. Roast for about 20–25 minutes, flipping halfway through until tender and lightly browned.
  4. Meanwhile, whisk together whole grain mustard, Dijon mustard, red apple vinegar, minced garlic, remaining olive oil, and honey in a bowl. Season with salt and pepper.
  5. Once roasted, arrange vegetables on a platter and drizzle with the vinaigrette before serving.
