  • 2 cups cherries (washed, pitted, halved)
  • 1 1/3 cups white granulated sugar
  • 5 tbsp unsalted butter (melted)
  • 2 large eggs
  • 1 cup semi-sweet chocolate chips
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 tsp pure vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 400°F (200°C) and roast the halved cherries on a parchment-lined baking sheet with a sprinkle of sugar for about 10 minutes. Let cool.
  2. Lower the oven temperature to 325°F (165°C). Prepare an 8×8 inch baking pan by spraying it with non-stick spray and lining it with parchment paper.
  3. In one bowl, sift together flour, cocoa powder, salt, and cornstarch. In another bowl, whisk together sugar, eggs, melted butter, oil, and vanilla extract until fluffy.
  4. Gently fold the dry ingredients into the wet mixture until just combined. Fold in half of the roasted cherries and chocolate chips.
  5. Pour the batter into the prepared pan and bake for 40-50 minutes until edges are set but center is slightly underdone.
  6. Allow to cool completely before cutting into squares.
